A friend of mine told me to try substituting beans for oil/fat in cake mixes and other recipes. It eliminates the fat and cholesterol, and it pumps up the protein and nutrients.
It works! I made brownies from a mix, substituting canned, refried beans for the oil. And yum. The brownies were soft, creamy, cake-like; not greasy, and actually (to me) yummier than regular brownies.
